Where do you find that?

I have a history of becoming obsessed with a particular thing, and then going to extreme measures to track down things that might be readily available in a larger country but no common at all in a small island nation in the pacific. I thought it would be a good idea to keep a track of the things that I have found that might be hard for others to find, not only to help you get what you want, but also to support the businesses that take the risk of stocking something that may not otherwise sell, especially consumer products that have no real industrial use. From Molecular Gastronomy Supplies to simple ingredients, hopefully a list that makes life, cooking, and experimentation a little easier.

Here is a list that might help others. If you have anything to add just use the contact form and let me know.

Calcium Chloride

Hi Brian. Nice to see your TG experiments are coming along.

Got a new supplier for your list: http://www.medchemingredients.co.nz/

I’ve just sent them an email about getting some mannitol – no reply yet, so I can’t tell you what their service is like. Their site isn’t the easiest to get around – and no prices – but they seem to have a lot of interesting stuff.

    Bye,

    Leslie

    Hi Leslie.

I did actually have Medchem before I put the post up but that for the Hydrocolloids that they had on their website, turns out that they don’t have those on hand. But they definitely will have a lot of the other stuff listed on their site.

What did you have planned for the Mannitol? Some kind of crazy dessert? or Breath Fresheners?

El Bulli’s peanuts – even found a peanut mould from Home Style Chocolates in Hamiltron (City of the Future).

Hey. i was just looking at your source for sodium alginate but thought I would mention that Common Sense Organics sell Xanthan gum and as I recall a variety of other weird and wonderful additives.

Thanks a lot – been trying to source these things and great to have NZ options. Australian option, but a very good one is Melobourne Food Depot http://www.mfcd.net/depot/
